In a barrel most of the wood never imparts a flavor that ends up in the final spirit. We only need 2% of the amount of wood as traditional aging. This allows us to focus on selecting only the best wood and only taking a few branches, keeping our big tree friends growing for generations.
It only takes us four hours to age the spirit but it’s not about being faster, it’s about doing it right. We’ve spent years matching the right wood, finding the right trees, perfecting the right distillate. Every gram of wood is individually inspected and selected for inclusion with the spirit. And all that experience is paired with extreme meticulous precision. That’s a lot of time and work, and that’s why it comes together in a better spirit.

The Best Distilled Spirits
Start with extremely high potential and maximize it.
- Water is life- We start at the water, limestone filtered, crystal clear water. The best water for the best spirit.
- Grains are the foundation- Anything that’s built needs a good base, our grains are hand selected for the right balance of flavor and sweetness, and our malts are masterfully roasted to pair with this balance.
- Yeast is king- The flavors in spirits are almost exclusively produced by the yeast. Using the right premium yeast produces the flavors that form the spirit and define the experience.
- Potstill for flavor- All our spirits are exclusively based on pot still distillation. Pot stills preserve the good flavor and precisely extract the tails, giving us the best possible result from the fermentation.
